Ingredients

  • 1 cup rolled oats
  • 1/2 cup egg whites
  • 1/2 cup unsweetened applesauce
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Instructions

This became our weekday survival meal. Make it Sunday night, cut it into squares, and grab one every morning. It tastes like a warm cinnamon roll if you close your eyes — and it takes about three minutes of actual effort to put together. We kept a batch in the fridge at all times during the third trimester. Cold, reheated, straight out of the pan at 2 AM — it works every way.

Instructions

  1. Preheat oven to 350°F.
  2. Combine the oats, egg whites, applesauce, baking powder, cinnamon, and vanilla in a bowl. Stir until evenly mixed.
  3. Pour into a non-stick baking dish (or line with parchment paper).
  4. Bake for 25–30 minutes until the top is golden and the center is set.
  5. Let cool for a few minutes before slicing into squares.

Notes

Top with fresh berries, a drizzle of honey, or fat-free maple syrup. This keeps well in the fridge for 3–4 days — reheat a square in the microwave for a quick weekday breakfast. Double the recipe for a full week of meal prep.
