Instructions

Marketing food is a pro trick for getting kids to try things. “Fancy Udon” is one of many marketed meals in our house, and it’s an easy meal to make fat free that everyone enjoys. This glaze is sticky, tangy, and hits that same craving without the fat. Use shrimp or slice up some chicken breast — both work. The honey in the sauce caramelizes just enough in the hot pan to make the noodles feel indulgent. When you have a craving for that savory takeout, this can help hit the spot.

Instructions

  1. Whisk together the soy sauce, rice vinegar, honey, ginger, and garlic in a small bowl. Set aside.
  2. Cook the udon noodles according to package directions. Drain and set aside.
  3. Heat a non-stick skillet or wok over medium-high heat. Add the shrimp or chicken with a splash of water. Cook until done — about 3 minutes for shrimp, 5–6 minutes for chicken.
  4. Add the cooked noodles and the sauce to the pan. Toss everything together over heat for 1–2 minutes until the glaze thickens and coats the noodles.

Notes

The glaze reduces quickly, so keep it moving once the noodles are in the pan. Add sliced green onions, sesame seeds, or steamed broccoli on top if you want extra texture. Nutrition calculated with shrimp — chicken breast will be similar in fat but slightly higher in calories.
