'Fancy' Ginger-Soy Udon Glaze
Ingredients
- 8 oz udon noodles
- 1 lb shrimp or boneless skinless chicken breast, sliced thin
- 3 tbsp soy sauce (or low-sodium soy sauce)
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp fresh ginger, grated
- 3 cloves garlic, minced
Instructions
Whisk together the soy sauce, rice vinegar, honey, ginger, and garlic in a small bowl. Set aside.
Cook the udon noodles according to package directions. Drain and set aside.
Heat a non-stick skillet or wok over medium-high heat. Add the shrimp or chicken with a splash of water. Cook until done — about 3 minutes for shrimp, 5–6 minutes for chicken.
Add the cooked noodles and the sauce to the pan. Toss everything together over heat for 1–2 minutes until the glaze thickens and coats the noodles.
Notes
The glaze reduces quickly, so keep it moving once the noodles are in the pan. Add sliced green onions, sesame seeds, or steamed broccoli on top if you want extra texture. Nutrition calculated with shrimp — chicken breast will be similar in fat but slightly higher in calories.
